This is one of the most useful things to understand when shopping for Lion's Mane, because “Lion's Mane powder” and “Lion's Mane extract powder” aren't necessarily the same thing.

Mushroom powder

Mushroom extract

An extract involves processing the mushroom material to concentrate particular components. That's what you're buying here: OstroVit describes this product specifically as Lion's Mane extract, rather than simply powdered Lion's Mane mushroom.

What does “30% polysaccharides” mean?

This is where OstroVit's standardisation becomes useful. The extract is standardised to 30% polysaccharides. Because one daily serving contains 500mg of extract, OstroVit specifies that this provides 150mg of polysaccharides. Standardisation essentially gives you another piece of information with which to evaluate the supplement.

But polysaccharides aren't the same as beta-glucans

This is an important distinction. Beta-glucans are a type of polysaccharide, but a total polysaccharide figure shouldn't automatically be interpreted as a beta-glucan figure. So if one Lion's Mane supplement specifies 30% polysaccharides and another gives a particular beta-glucan content, those numbers shouldn't be directly compared as though they measure exactly the same thing.
